Chicken Sausage Swiss Chard Hash
Ingredients:
1 sweet potato (peeled and chopped)
1 cup of leftover sauteed swiss chard
1 avocado (sliced)
1 tablespoon of butter (I used Almond Oil butter)
2 eggs
2 organic maple chicken sausage links (feel free to use your preference of sausage links)
2 tablespoons of extra virgin olive oil or grapeseed oil
1 teaspoon of paprika
1 teaspoon of fresh ground black pepper
1 teaspoon of cumin
1 teaspoon of seasoning salt (feel free to also use the Trader Joe’s Vegan Chicken-less Seasoning Salt)
a pinch of nutmeg
a pinch of cinnamon
1 lb of love
Instructions:
Preheat your oven at 425 degrees Fahrenheit
Step 1: Take your peeled and chopped sweet potatoes and toss it in 1 tablespoon of olive oil with all of the spices listed above and sit it on the side
Step 2: Take a cast-iron skillet or frying pan and warm up the other tablespoon of oil on medium heat. Once it starts to get hot, add in your chicken sausage links. Once your sausage links are fully cooked, remove them from the skillet or pan and add sweet potatoes.
Step 3: Cut your chicken sausage up into diced pieces and add it back to the pan. Sautee the sausage and sweet potatoes together for about 5 - 7 minutes or with the tablespoon of butter
Step 4: Crack the egg over the skillet and sprinkle some freshly ground black pepper and Himalayan pink salt, and put it in the oven for 10 minutes.
Step 5: remove it from the oven, plate it, top it with sliced avocado and enjoy
